Abstract Summary

Study tracks poultry microbiome from farm to consumer using high-throughput sequencing, revealing a core community of potential pathogens including Campylobacter. While processing reduced microbial diversity and pathogen levels, carcasses 48 hours post-processing harbored unexpected unique taxa. Retail products contained 27 genera, mostly metabolically active. Network analysis showed Campylobacter operates independently, explaining why competitive exclusion strategies fail.
